It's Grillin' Season
Ingredients
Steak and Salad:
- 2 small bacon-wrapped filet mignon
- 1 1/2 teaspoon JR’s All-Purpose seasoning
- 1/2 cup JR’s BBQ auce
- 8 cups Scissortail Farms salad greens, chopped
- 1/3 cup radishes, thinly sliced
- 3/4 cup corn kernels, fresh or frozen (thawed)
- 1/4 cup Scissortail Farms cilantro, chopped
BBQ Ranch Dressing:
- 3/4 cup mayonnaise
- 3/4 cup Hiland buttermilk
- 1 teaspoon JR’s All-Purpose seasoning
- 3 tablespoons JR’s BBQ Sauce
- 1 teaspoon Garden Club vinegar
- 1 teaspoon Roark Acres honey
- 1 teaspoon Scissortail Farms dill, chopped
- 2 teaspoons Scissortail Farms parsley, chopped
- 1 clove garlic, minced
- 4 teaspoons freshly ground black pepper
Directions
Marinate filets 30 minutes to an hour in a shallow bowl with JR’s All-Purpose Seasoning and JR’s BBQ Sauce. Grill steaks over medium to medium-high heat about 6 to 8 minutes per side or until desired doneness. Remove steaks from heat and let rest 5 minutes. Thinly slice steaks. Mix together all the ingredients for the dressing. Stir until creamy. In a large bowl, combine salad greens, radishes, corn and cilantro. Toss with BBQ Ranch Dressing. Top with sliced steak.
