Mini jam cheesecakes
Ingredients
- 4 tablespoons Hiland Dairy unsalted butter, melted
- 1 cup graham cracker crumbs
- 1 (8 oz) package Hiland Dairy cream cheese, softened
- 1/3 cup granulated sugar
- 1 teaspoon Griffin’s vanilla
- 1 Hansen’s egg, lightly beaten
- Assorted Garden Club jams in any flavors
Directions
In a small bowl, combine the melted butter and graham cracker crumbs. Line a muffin tin with paper muffin liners. Spray lightly with nonstick cooking spray, then press crumb mixture into the bottoms of the muffin liners. Set aside. In medium bowl, beat the cream cheese, sugar and vanilla with an electric mixer until smooth. Add the egg, continue to beat on low. Once combined, spoon mixture into the prepared muffin liners. Bake at 350 degrees for 12-15 minutes or until the centers are set. Remove from oven and cool for 10 minutes, then remove from pan and let cool completely. Once cooled, refrigerate 1 hour before topping each with jam and an optional fresh fruit garnish.
