Deana's Dinner Skillet


  • 4 tablespoons olive oil
  • 14 to 16 ounces, fully cooked smoked sausage
  • 28-ounce bag frozen potatoes with onions and peppers
  • 1 pound shredded coleslaw mix
  • 2 teaspoons cajun seasoning


Heat 1 tablespoon of oil in a large skillet over medium-high heat (cast iron works well). Cut the sausage into rounds and place them into the oil. Brown on both sides. Transfer to a large serving dish. Add the remaining oil and heat; when hot, add the potatoes in an even layer. Cook until golden, about 8 minutes, flipping every 2 to 3 minutes. Stir in the slaw mix and cajun seasoning. Cook, stirring occasionally, until the cabbage is tender, about 3 minutes. Mix the potatoes/cabbage with the sausage and serve. OKL Article End
